In today’s economy we really have to watch our budgets.
 
Save where you can. Get creative with your food leftovers to really stretch your
 
food budget dollars. This is a wonderful recipe to utilize yesterday bread, or
 
various left over breads, such as French bread which tends to get harder the
 
next day, etc.
 

 
It’s such a versatile recipe that you can basically utilize any type of bread you
 
like and have on hand; such as pita bread, fajita, French bread, multigrain
 
bread etc. Make the most of your food, use it creatively instead of throwing it
 
out, and let noting go to waste.
 

 
Leftover’s make great nutritious for lunches for the kids. It’s delicious served
 
cold as well. For a brunch gathering, you can also opt to add bacon or ham in
 
the layers. It’s an easy recipe that you can enjoy all year round, simply serve it
 
with side dishes of the season.
 

 
Serves 6
 
2 tablespoons (30 g) olive oil
 
3 large onions, sliced thinly
 
½ cup (60 g) grated Parmesan cheese
 
1½ cup (60 g) shredded Cheddar cheese
 
1 tablespoon of fresh chives, snipped
 
8 slices of whole-wheat bread, remove crusts
 
3 eggs, lightly beaten
 
2 cups (500 ml) of milk
 
Fresh ground pepper
 

 
(*optional)Embellish with fresh balsamic leaves
 
And Fresh parsley sprigs
 

 
Heat oil in a skillet and cook onions over a gentle for 10-15 minutes until the
 
onions are golden soft.
 

 
Grease the baking dish with a bit of oil. Place the bread slices (cutting them to
 
fit if needed) to line the bottom and sides of an oven safe dish to fit snugly.

Combine the cheeses and chives.
 

 
Cover with the half the onion mixture, sprinkle half the cheese over the onions.
 
Repeat with remaining onions and cheese to create more layers.

In a bowl, combine the eggs and milk, beat slightly and pour over the bread,
 
onion and cheese mixture in the dish.

Bake at 375 F (190 C) for 30 – 35 minutes.

Top with a sprig of fresh herb of your choice and enjoy with a tasty salad or
 
summer veggies. Enjoy, Bonne Appétit!
